It's rich and silky and makes a perfectly light treat that takes only minutes to make!INGREDIENTS
For the caramel:
70 g (2.4 oz) sugar;4 tbsp water.
For the cake:
2 eggs;40 g (1.4 oz) powdered sugar;20 g (0.7 oz) honey;50 g (1.7 oz) flour.For the panna cotta:
60 g (2 oz) sugar;3 eggs;1 egg yolk;1 1/3 cup warm milk.
METHOD
Preheat oven to 160C/320F.To make caramel mix water and sugar and place over medium heat. Heat without stirring until caramel gets deep brown.Remove from the stove and pour into 4 ramekins.Start making the cake by beating eggs, honey and sugar until pale and fluffy. Add flour and fold it in carefully.For the panna cotta whisk all ingredients listed until smooth.Pour panna cotta mixture over caramel, then top with layer of fluffy cake.Place ramekins into large baking pan and fill it with hot water halfway. Bake for 35 minutes, serve topped with icing sugar and berries.
